After extraction, the next process is conservation. An effective conservation is the best way to keep the oil quality unchanged. Oxidation is the main cause of the decomposition of oil. So oil should not have a long contact with air. The best way to avoid oxidation is to keep oil in special stainless steel tanks, that have a conic bottom that allows to eliminate the remainders during the conservation period.
They also allow the introduction of inert gases that can substitute air and oxygen at the top of the tank.
They can also have thermostats that keep the temperature between 12 and 18°. In absence of a thermostat, the place where the oil is conservated, must be thermoregulated.
Packaging must meet some simple needs such as the choice of dark colour bottles, to prevent oxidation caused by light, the choice of screw-stoppers with anti-drops system . Cork could release particles in the oil.
